Start to finish
Plan your work flow. 
1.  Main Menu
2.  Three Video Clip Buttons that will return to the main menu after playing the clip
3.  Play All Button that will play all clips one after another
Start in Premier and build the AVI files.
1.  Create three separate clips (save as avi and let encore do the encoding)
2.  File Export Movie - Name it - Save
3.  Close premier and open Encore
ENCORE:

1.  File - Open New Project - NTSC
2.  Setup - Library Pallet - Default Menu 16X9 Blank Menu - Blue Flare BG.PSD
3.  Right click and say "set as default menu"
4.  Choose button style
5.  Set as default button type
6.  Create Menu - MENU - New Menu
7.  Import video clips as Assets - Right click in the project window - Import as asset
8.   To create clip buttons, just drag the avi file ONTO the menu background.  The button with a clip screen should show up immediately because you created the "default" button earlier.
9.  Select all three by holding down shift or control and Distribute (relative to safe areas)- Align buttons to the bottom, distribute horizontally
10.  Play All button - choose PSD button from Asset Library and drop on screen
 
Making the Buttons Work:
1.   Open the timelines of the avi files.
2.   Now you see two of every clip you inserted as an asset.  One is the avi and one is the timeline.
3.   You first need to set the END ACTION for each timeline.
4.   Open timeline properties palette.
5.   Click on the timeline file that you want to start with (the one that will play first if you select "play all")
6.   In the timeline properties box look for where it says "END ACTION" not set.
7.   Click on the pick wick tool - the little icon in front of the Not Set selection and hold down the mouse and drag it to the next video that you want to play (so it says, after this first video completes playing, the end action will be to play this next video) which you will drag the pick wick line to the next video you want to begin playing when that first one is finished playing. (You will see that Encore will automatically fill in the area that said Not Set with the name of the second movie you want to play.)
8.    Now select, highlighting the second movie clip and do the same thing by setting the end action to be the 3rd clip or next clip that you wish to play.
9.   After the third clip plays, you will want it to go to the main menu.  So you can use the dropdown arrow in the timeline properties box and select the main menu and then the objects.    This will return it to the main menu or you can return to the main menu and have a button pre-selected.
10.  Select Play All button by clicking on the button graphic.  The Button properties box will come up and you will see that the LINK is NOT SET. 
11.  Click on the pick wick and set drag the link to the FIRST clip you want to play.

Now when you click the play all button each video clip will play one after the other as programmed.  Now we have to tell it to play and end each individual video clip if only that clip's button is selected.

12.  Click on the button for the first video clip.
13.   OVERRIDE field - Right now it is set to "Not Set" change the override field to select the Main Menu default
14.   Continue doing that to each of the buttons.
15.   Ready to burn the DVD
16.   SAVE PROJECT

BURNING THE DVD
1.  File - Burn DVD:

      Make DVD Disk
      Make DVD Folder
      Make DVD Image
      Make DVD Master (used to send to a duplication house)

2.   Create using "current project" - OK or Next
3.   Build
Now you're done.  Label your dvd.
 
 
 
Another Tutorial:
The first time you open Adobe Encore, you see the following empty screen.  Now what?

STEP 1:  Start a new project
STEP 2:  Import the video file as an asset.
STEP 3:  Create a timeline.
STEP 4:  Make a menu (buttons or words for viewers to click on)
 
Tips and helpful notes:
Timelines - hold each movie that will play when you click a button on the DVD menu that you will create.
I you are making your own menus bring all the layers in.
